These Buttermilk Pecan Pralines are a classic Southern candy, offering a creamy texture and rich, nutty flavor. Made with buttermilk, sugar, and pecans, they melt in your mouth and are perfect for gifting or indulging.
Ingredients
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup buttermilk
- 1/4 cup unsalted butter
- 1 cup pecans, chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- Pinch of salt
Instructions
- Line a baking sheet with parchment paper or a silicone mat.
- In a medium saucepan, combine granulated sugar, brown sugar, buttermilk, and butter.
- Cook over medium heat, stirring constantly until the mixture comes to a boil. Once boiling, stop stirring and let it boil for about 5 minutes until it reaches 240°F (115°C).
- Remove from heat and stir in chopped pecans, vanilla extract, baking soda, and a pinch of salt. The mixture will bubble slightly.
- Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Work quickly as the mixture sets as it cools.
- Allow the pralines to cool completely at room temperature until they harden, about 30 minutes.
Notes
For a different flavor, substitute pecans with walnuts or almonds. Adding a dash of cinnamon or nutmeg can provide a warm spice note. Drizzling melted chocolate over the cooled pralines adds an extra decadent touch. Store in an airtight container at room temperature for up to 2 weeks. To soften slightly, place in a warm oven (around 200°F or 93°C) for a few minutes.
