Butterscotch Bars with Butterscotch Chips – Easy Dessert Recipe

  • Author: Fati
  • Total Time: 40 minutes
  • Yield: 16 bars 1x

Description

Rich, chewy Butterscotch Bars loaded with butterscotch chips, semi-sweet chocolate, and optional nuts. A simple one-bowl recipe that bakes to golden perfection with a soft, gooey center.

Ingredients

Scale
  • ½ cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butterscotch chips
  • ½ cup semi-sweet chocolate chips
  • Optional: ½ cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
  2. In a medium bowl, stir together melted butter and brown sugar until smooth and slightly cooled.
  3. Whisk in the egg and vanilla extract until fully combined and silky.
  4. Add flour, baking powder, and salt; stir gently until just combined. Avoid overmixing.
  5. Fold in butterscotch chips, semi-sweet chocolate chips, and nuts if using.
  6. Spread batter evenly into prepared pan, smoothing the top and pressing into corners.
  7. Bake for 25–30 minutes until edges are golden and center is set but slightly gooey; a toothpick may come out with moist crumbs.
  8. Allow bars to cool before slicing to prevent crumbling.

Notes

For best texture, do not overmix batter. Bars are best enjoyed slightly warm for a gooey center. Store cooled bars in airtight container at room temperature up to 4 days, refrigerate for longer freshness, or freeze individually wrapped up to 2 months. Nuts are optional and can be substituted with coconut or pretzels for texture variation.
