Description
Rich, chewy Butterscotch Bars loaded with butterscotch chips, semi-sweet chocolate, and optional nuts. A simple one-bowl recipe that bakes to golden perfection with a soft, gooey center.
Ingredients
Scale
- ½ cup unsalted butter, melted
- 1 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup butterscotch chips
- ½ cup semi-sweet chocolate chips
- Optional: ½ cup chopped pecans or walnuts
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
- In a medium bowl, stir together melted butter and brown sugar until smooth and slightly cooled.
- Whisk in the egg and vanilla extract until fully combined and silky.
- Add flour, baking powder, and salt; stir gently until just combined. Avoid overmixing.
- Fold in butterscotch chips, semi-sweet chocolate chips, and nuts if using.
- Spread batter evenly into prepared pan, smoothing the top and pressing into corners.
- Bake for 25–30 minutes until edges are golden and center is set but slightly gooey; a toothpick may come out with moist crumbs.
- Allow bars to cool before slicing to prevent crumbling.
Notes
For best texture, do not overmix batter. Bars are best enjoyed slightly warm for a gooey center. Store cooled bars in airtight container at room temperature up to 4 days, refrigerate for longer freshness, or freeze individually wrapped up to 2 months. Nuts are optional and can be substituted with coconut or pretzels for texture variation.
