Ingredients
2 cups all-purpose flour
1.5 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 teaspoons pure vanilla extract
1 cup hot coffee
1 cup unsalted butter, softened
3 cups powdered sugar
1/4 cup heavy cream
1 bag Cadbury Mini Eggs
Instructions
Step 1: Preheat oven to 350°F and line cupcake pans.
Step 2: Sift together all dry ingredients in a large bowl.
Step 3: Mix in the buttermilk, oil, eggs, and vanilla until smooth.
Step 4: Slowly stir in the hot coffee until fully incorporated.
Step 5: Fill liners 2/3 full and bake for 20 minutes.
Step 6: Cool cupcakes completely on a wire rack.
Step 7: Beat butter and sugar for the frosting until fluffy.
Step 8: Pipe a nest shape using a grass tip or star tip.
Step 9: Top each nest with three Cadbury Mini Eggs.
