Description
A creamy and spicy white bean chili infused with bold Cajun seasonings and tender chicken.
Ingredients
2 lbs chicken breast, cubed into bite-sized pieces
2 tbsp olive oil
1 large onion, finely diced
1 green bell pepper, chopped
2 stalks celery, sliced
3 cloves garlic, minced
2 cans (15 oz each) Great Northern beans, drained and rinsed
4 cups low-sodium chicken broth
1 tsp ground cumin
1 tsp dried oregano
1 tsp Cajun seasoning blend
1/4 tsp cayenne pepper
1/2 cup heavy cream
1 tbsp fresh lime juice
Salt and black pepper to taste
Instructions
Step 1: Heat the olive oil in a large Dutch oven over medium-high heat and sear the chicken pieces until browned, then remove and set aside.
Step 2: Add the onion, bell pepper, and celery to the pot and sauté until softened, about 5-7 minutes.
Step 3: Stir in the garlic, cumin, oregano, Cajun seasoning, and cayenne pepper, cooking for 1 minute until fragrant.
Step 4: Pour in the chicken broth and white beans, bringing the mixture to a gentle simmer.
Step 5: Return the chicken to the pot, cover, and simmer for 20 minutes to meld the flavors.
Step 6: Stir in the heavy cream and lime juice, heating through for 5 minutes before serving with your favorite toppings.
Notes
Adjust the cayenne pepper to control the heat level. This chili is even better the next day!
