Description

A refreshing, creamy salad combining crisp cucumbers, creamy avocado, savory crab meat, and a tangy dressing for a light and flavorful meal.


Ingredients

  • 1 English cucumber, diced
  • 1 avocado, diced
  • ¼ cup red onion, diced
  • 1 cup imitation crab meat, shredded
  • 1 tablespoon sesame seeds or furikake seasoning
  • ¼ cup mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sugar

Instructions

  1. In a small bowl, whisk together mayonnaise, soy sauce, sesame oil, rice wine vinegar, and sugar to prepare the dressing.
  2. Dice cucumber, avocado, and red onion; shred imitation crab meat into bite-sized pieces.
  3. Combine cucumber, avocado, red onion, and crab meat in a medium bowl.
  4. Pour dressing over the salad ingredients and toss gently until well coated.
  5. Sprinkle sesame seeds or furikake seasoning over the top.
  6. Serve immediately or chill for 10-15 minutes for flavors to meld.

Notes

Best enjoyed fresh to maintain avocado and cucumber texture. Add avocado last to prevent browning. Store leftovers in airtight container up to 1 day. Customize with sriracha for spice or substitute fresh crab for imitation crab.
