An irresistible sweet and salty treat featuring crispy Ritz crackers, gooey caramel, crunchy peanuts, and a rich chocolate coating, perfect for any occasion.
Ingredients
36 Ritz crackers
1 (14 ounce) bag soft caramels, unwrapped
2 tablespoons heavy cream or milk
1 cup roasted salted peanuts, chopped
12 ounces semi-sweet chocolate chips (or milk chocolate/dark chocolate)
1 tablespoon coconut oil or shortening (optional, for melting chocolate)
Instructions
Step 1: Line a baking sheet with parchment paper. Arrange Ritz crackers in a single layer on the prepared sheet.
Step 2: In a microwave-safe bowl, combine unwrapped caramels and heavy cream. Microwave on high for 1-2 minutes, stirring every 30 seconds, until completely melted and smooth. Be careful not to overheat.
Step 3: Stir the chopped peanuts into the melted caramel mixture until well combined.
Step 4: Spoon a dollop of the caramel peanut mixture onto the center of each Ritz cracker. Gently spread it almost to the edges, leaving a small border.
Step 5: Place the baking sheet in the refrigerator for at least 15-20 minutes to allow the caramel to firm up slightly.
Step 6: While the crackers are chilling, melt the chocolate. In a clean, microwave-safe bowl, combine chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until smooth and fully melted. Alternatively, melt in a double boiler.
Step 7: Dip each caramel-topped cracker into the melted chocolate, ensuring it's fully coated. Lift with a fork, allowing excess chocolate to drip off.
Step 8: Return the chocolate-coated crackers to the parchment-lined baking sheet. If desired, sprinkle with a pinch of sea salt or extra chopped peanuts before the chocolate sets.
Step 9: Refrigerate for at least 30 minutes, or until the chocolate is completely set. Once set, store in an airtight container.
Notes
For extra crunch, lightly toast the peanuts before adding them to the caramel. You can also drizzle white chocolate over the finished crackers for an elegant touch. These make fantastic edible gifts!
