Ingredients
2 firm ripe pears (Bosc or Anjou), cored and sliced
1 tbsp unsalted butter
1 tbsp light brown sugar
4 cups mixed salad greens
1/2 cup crumbled blue cheese (such as Gorgonzola or Roquefort)
1/2 cup candied walnuts
For the Balsamic Vinaigrette:
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey or maple syrup
Salt and freshly ground black pepper to taste
Instructions
Step 1: Prepare Candied Walnuts (if not store-bought): In a small non-stick pan over medium heat, combine 1/2 cup walnuts with 1 tbsp sugar and 1 tsp water. Stir continuously until sugar melts and coats walnuts, then transfer to parchment paper to cool completely.
Step 2: Caramelize Pears: In a large skillet, melt butter over medium heat. Add pear slices and brown sugar. Cook for 3-5 minutes per side, until pears are tender and beautifully caramelized. Remove from heat and let cool slightly.
Step 3: Prepare Vinaigrette: In a small bowl or jar, whisk together (or shake) the olive oil, balsamic vinegar, Dijon mustard, honey/maple syrup, salt, and pepper until well combined and emulsified.
Step 4: Assemble Salad: In a large serving bowl, combine the mixed greens, cooled caramelized pears, crumbled blue cheese, and candied walnuts.

Notes
For an extra layer of flavor, you can toast the walnuts lightly before candying them. If you prefer a milder salad, use a creamy goat cheese instead of blue cheese.
