Description

This moist and flavorful quick bread combines shredded carrots, zucchini, and diced apples with warm spices, creating a wholesome and delicious treat perfect for any time of day.


Ingredients

1 cup unsalted butter, melted
2 cups granulated sugar
3 eggs, room temperature
¼ cup fresh orange juice
1 tbsp vanilla extract
3¼ cups all-purpose flour
½ tsp salt
2½ tsp baking powder
¾ tsp baking soda
1 tsp cinnamon
pinch of ground cloves
pinch of ground nutmeg
2 cups shredded carrots
1 cup shredded zucchini, lightly blotted of excess moisture
1 cup diced peeled apple (Granny Smith, Fuji, or similar)
½ cup pecans, chopped


Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the melted butter and granulated sugar until well combined.
Step 3: Beat in the eggs one at a time, then stir in the fresh orange juice and vanilla extract until smooth.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, salt, baking powder, baking soda, cinnamon, ground cloves, and ground nutmeg.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 6: Gently fold in the shredded carrots, shredded zucchini, diced apple, and chopped pecans until evenly distributed.
Step 7: Pour the batter into the prepared loaf pan and spread evenly.
Step 8: Bake for 60-70 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean or with a few moist crumbs attached. If the top browns too quickly, you can tent it loosely with aluminum foil.
Step 9: Remove the bread from the oven and let it cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely. Slice and serve.

Notes

For an extra touch, you can add a simple cream cheese glaze by whisking together 4 oz softened cream cheese, ½ cup powdered sugar, 1 tbsp milk, and ½ tsp vanilla extract. Drizzle over cooled bread.
