  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour

  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ½ cup raisins or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk eggs, applesauce, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. Fold in shredded zucchini (squeezed dry), carrots, and apple until evenly combined.
  4. In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring just until combined to avoid overmixing.
  6. Fold in optional chopped nuts or dried fruit if using.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake 55-65 minutes until a toothpick inserted in center comes out clean or with a few moist crumbs. Cover with foil if top browns too quickly.
  9. Cool in pan 10 minutes, then transfer to wire rack to cool completely before slicing.

Notes
