Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
1/2 cup unsalted butter, melted
3/4 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups mashed bananas (3 bananas)
1 1/2 cups grated carrots
1/2 cup chopped walnuts
Instructions
Step 1: Preheat oven to 350°F and grease a loaf pan.
Step 2: Whisk dry ingredients (flour, soda, powder, spices, salt) in a medium bowl.
Step 3: Mix melted butter and brown sugar; whisk in eggs and vanilla.
Step 4: Stir in mashed bananas and grated carrots.
Step 5: Fold the dry ingredients into the wet mixture until just combined.
Step 6: Fold in walnuts, then pour batter into the pan.
Step 7: Bake for 60 minutes or until a toothpick comes out clean.
Step 8: Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
Ensure carrots are finely grated for the best texture. If the top browns too fast, cover with foil.
