Ingredients
1 box (15.25 oz) Spice Cake Mix
3 large eggs
1 cup water
1/2 cup vegetable oil
2 cups freshly grated carrots
1/2 cup chopped walnuts (optional)
1/2 cup crushed pineapple, drained (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch pan.
Step 2: In a large bowl, mix the cake mix, eggs, water, and oil until well combined.
Step 3: Fold in the shredded carrots and optional nuts or pineapple.
Step 4: Spread the batter into the prepared pan.
Step 5: Bake for 30-35 minutes until a toothpick comes out clean.
Step 6: Cool completely before frosting with cream cheese icing.

Always use fresh carrots rather than pre-shredded ones for the best moisture levels.
