A rich and tangy pasta salad featuring sharp cheddar cubes and a velvety sour cream dressing.
Ingredients
1 lb elbow macaroni
1.5 cups sharp cheddar cheese, cubed
1 cup full-fat sour cream
1/2 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp yellow mustard
1/2 cup celery, diced
1/4 cup red onion, finely chopped
1/2 cup red bell pepper, diced
1 tsp garlic powder
1/2 tsp paprika
Salt and black pepper to taste
Instructions
Step 1: Cook the macaroni in salted boiling water until al dente, usually about 8-10 minutes.
Step 2: Drain the pasta and rinse immediately with cold water until cooled; set aside.
Step 3: In a large bowl, whisk together sour cream, mayo, vinegar, mustard, garlic powder, and paprika.
Step 4: Add the macaroni, cheddar cubes, celery, onion, and bell pepper to the dressing.
Step 5: Fold gently to coat and refrigerate for at least 2 hours before serving.
Notes
Ensure the pasta is completely cooled before adding the dressing to prevent the sour cream from melting.
