Ingredients
1 lb large fresh strawberries
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2 tbsp graham cracker crumbs
Optional: Fresh mint for garnish
Instructions
Step 1: Rinse the strawberries and pat them dry with a clean paper towel. Cut the stems off so the strawberry has a flat top.
Step 2: Use a paring knife or a small spoon to hull out the center of the strawberry to create a hole.
Step 3: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and fluffy.
Step 4: Place the cream cheese mixture into a piping bag with a star tip.
Step 5: Pipe the cheesecake mixture into the center of each strawberry, letting it swirl slightly above the top.
Step 6: Sprinkle the graham cracker crumbs over the piped filling.
Step 7: Chill in the refrigerator for at__least 30 minutes before serving for the best texture.
Notes
Ensure the strawberries are completely dry before piping the filling to prevent the cream from sliding off.
