A hearty and delicious breakfast bundt cake featuring crispy tater tots, savory bacon, fluffy eggs, and melted cheddar cheese, all baked to perfection in a bundt pan.
Ingredients
12 slices thick-cut bacon, cooked and crumbled
2 cans (16.3 oz each) refrigerated biscuit dough, cut into quarters
32 oz bag frozen tater tots
8 large eggs
1/2 cup whole milk
1 tsp Dijon mustard
1 tbsp Ranch dressing seasoning mix
2 cups shredded sharp cheddar cheese
Optional: Fresh chives, for garnish
Instructions
Step 1: Preheat your oven to 375°F (190°C). Grease a 10-12 cup bundt pan generously with non-stick cooking spray.
Step 2: In a large bowl, whisk together the eggs, whole milk, Dijon mustard, and Ranch dressing seasoning mix until well combined. Season with a pinch of salt and black pepper if desired.
Step 3: Gently fold in the cooked and crumbled bacon, quartered biscuit pieces, frozen tater tots, and 1.5 cups of the shredded cheddar cheese into the egg mixture. Mix carefully to ensure everything is coated.
Step 4: Pour the mixture evenly into the prepared bundt pan.
Step 5: Bake for 30-35 minutes, or until the biscuit pieces are golden brown and cooked through, and the egg is set.
Step 6: Remove the bundt from the oven and sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
Step 7: Let the bundt cool in the pan for 5-10 minutes before carefully inverting it onto a serving platter. Garnish with fresh chives, if using, and serve warm.
Notes
For extra crispiness, you can partially pre-bake the tater tots before adding them to the mixture, or pre-cook the biscuit pieces slightly. Make sure your bundt pan is thoroughly greased to prevent sticking.
