Description

Transform your leftover mashed potatoes into these irresistible, savory muffins bursting with cheddar cheese and fresh chives – a perfect side dish or snack!


Ingredients

3 cups leftover mashed potatoes (chilled is recommended)
1 large egg, lightly beaten
1/4 cup all-purpose flour (for binding)
3/4 cup shredded sharp cheddar cheese
2 Tablespoons fresh chives, finely chopped
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Salt to taste (depending on original mashed potatoes)
Cooking spray or 1 tablespoon melted butter (for greasing muffin tin)
For topping: 1/4 cup shredded sharp cheddar cheese
For topping: 1 Tablespoon fresh chives, finely chopped


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or melted butter.
Step 2: In a large bowl, combine the leftover mashed potatoes, lightly beaten egg, all-purpose flour, garlic powder, black pepper, and salt to taste. Mix well until everything is incorporated.
Step 3: Gently fold in 3/4 cup of the shredded sharp cheddar cheese and 2 tablespoons of the chopped fresh chives into the potato mixture.
Step 4: Divide the mixture evenly among the 12 prepared muffin cups. Sprinkle the remaining 1/4 cup shredded sharp cheddar cheese and 1 tablespoon of chopped chives over the top of each muffin.
Step 5: Bake for 20-25 minutes, or until the muffins are golden brown and heated through.
Step 6: Let the muffins cool in the tin for 5 minutes before carefully removing them. Serve warm and enjoy!

Notes

For best results, use chilled mashed potatoes. If your mashed potatoes are very loose, you might need an extra tablespoon of flour. Feel free to experiment with other cheeses like Gruyere or Parmesan, or add a pinch of cayenne for a subtle kick.
