Ingredients
4 cups fresh or frozen corn kernels, thawed and drained
4 tablespoons unsalted butter
3-4 cloves garlic, minced
1/2 cup milk or heavy cream
1.5 cups shredded cheese (cheddar, mozzarella, or a blend)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
2 tablespoons fresh parsley or chives, chopped (for garnish, optional)
Instructions
Step 1: If using frozen corn, ensure it's thawed and well-drained. If using fresh corn, cut the kernels from the cobs.
Step 2: In a large skillet, melt the unsalted butter over medium heat.
Step 3: Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant. Be careful not to let the garlic brown.
Step 4: Add the corn kernels to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until the corn is tender and slightly cooked through.
Step 5: Pour in the milk or heavy cream and stir to combine. Bring the mixture to a gentle simmer.
Step 6: Reduce heat to low and sprinkle in the shredded cheese. Stir continuously until the cheese is completely melted and forms a smooth, creamy sauce around the corn.
