  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 cups cooked white or brown rice
  • 1 can (10.5 oz) cream of mushroom or cream of cheddar soup
  • ½ cup sour cream
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ tsp dried parsley or thyme
  • ½ cup frozen peas or corn (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown ground beef and diced onion until beef is no longer pink and onion is soft, about 6-8 minutes. Drain excess fat.
  3. Return skillet to medium heat; add garlic, salt, pepper, and paprika. Cook 1-2 minutes until fragrant.
  4. In a large bowl, combine beef mixture, cooked rice, soup, sour cream, milk, 1 cup cheddar cheese, parsley or thyme, and frozen peas or corn if using. Mix gently.
  5. Spread mixture evenly in prepared baking dish. Top with remaining ½ cup cheddar cheese.
  6. Bake uncovered for 25-30 minutes until cheese is golden and sauce bubbles around edges.
  7. Let rest 5-10 minutes before cutting into squares. Garnish with chopped parsley, chives, or extra peas if desired. Serve warm.
