Ingredients
- Pizza dough – 16 oz ball (homemade or store-bought)
- Pizza sauce – 1 cup (homemade or store-bought)
- Mozzarella cheese – 2 cups shredded
- Egg yolk – 1 egg, whisked with 1 tbsp water
- All-purpose flour – For rolling out dough
- Salt – To taste
- Pepper – To taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Roll out the pizza dough on a lightly floured surface until it is 1/4 inch thick.
- Cut the dough into 8 evenly sized rectangles, then roll them out to 8 inches long.
- Spread 1 tbsp of pizza sauce on one end of each rectangle, then top with 2 tbsp of shredded mozzarella cheese and any other desired toppings.
- Fold the dough over to cover the filling and seal the edges with a fork.
- Brush each pizza pocket with the egg wash (egg yolk and water mixture) for a golden finish.
- Place the pizza pockets on the prepared baking sheet and bake for 12-17 minutes or until golden brown.
- Allow the pizza pockets to rest for a few minutes before serving as they will be hot right out of the oven.
Notes
For a crispier crust, bake the pockets longer, but be careful not to overbake them. Add additional toppings like pepperoni, mushrooms, or veggies for extra flavor. Ensure store-bought dough is not pre-baked. Make ahead and store in fridge up to 3 days or freeze up to 3 months.
