Ingredients
2 lbs red potatoes, diced into 1/2 inch cubes
14 oz smoked sausage or kielbasa, sliced into rounds
3 tbsp olive oil
1 packet (1 oz) dry ranch seasoning mix
1.5 cups sharp cheddar cheese, shredded
1/2 tsp black pepper
Optional: Fresh parsley or green onions for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and lightly grease a large rimmed baking sheet with non-stick spray or a thin layer of oil.
Step 2: In a large mixing bowl, combine the diced potatoes and sliced smoked sausage.
Step 3: Drizzle the olive oil over the potatoes and sausage, then sprinkle with the ranch seasoning packet and black pepper. Toss thoroughly until everything is evenly coated.
Step 4: Spread the mixture onto the prepared baking sheet in a single layer, ensuring the pieces aren't too crowded.
Step 5: Roast in the preheated oven for 30-35 minutes, or until the potatoes are tender and golden brown. For even cooking, flip the potatoes halfway through with a spatula.
Step 6: Remove the pan from the oven and sprinkle the shredded cheddar cheese evenly over the top.
Step 7: Return the pan to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.
Step 8: Garnish with fresh parsley or green onions if desired, and serve immediately while hot.
Notes
For extra crispiness, use a dark metal baking sheet. If using a glass dish, increase cook time by 5-10 minutes.
