Easy and addictive, these savory, cheesy, and slightly spicy bites are perfect for parties, breakfast, or game day.
Ingredients
1 lb breakfast sausage (mild or spicy)
2 cups shredded sharp cheddar cheese
1 can (10 oz) Rotel diced tomatoes with green chilies, well drained
1½ cups Bisquick baking mix
½ tsp garlic powder (optional)
Instructions
Step 1: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Step 2: In a large bowl, combine the breakfast sausage, shredded sharp cheddar cheese, well-drained Rotel, Bisquick baking mix, and garlic powder (if using).
Step 3: Mix well using your hands until all ingredients are fully combined and evenly distributed. Ensure no dry spots of Bisquick remain.
Step 4: Roll the mixture into approximately 1-inch balls and place them on the prepared baking sheet, leaving a little space between each.
Step 5: Bake for 20–25 minutes, or until the sausage balls are golden brown and cooked through in the center.
Step 6: Let cool slightly on the baking sheet for a few minutes before transferring to a serving platter. Serve warm with your favorite dipping sauce.
Notes
For an extra kick, use hot breakfast sausage and extra spicy Rotel. These sausage balls are fantastic with honey mustard, ranch, or a spicy queso dip. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days and reheated in the microwave or oven.
