Ingredients
1 lb (450 g) lean ground beef
3 slices turkey bacon, chopped
½ cup chicken ham, diced
1 small yellow onion, finely chopped
1 green bell pepper, seeded and diced
2 cloves garlic, minced
1 cup ketchup
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
2 tbsp brown sugar, packed
½ tsp smoked paprika
Salt and black pepper, to taste
8 slices Texas toast
2 tbsp vegetable oil or butter, for toasting
1 cup shredded cheddar or pepper jack cheese, for topping
Instructions
Step 1: Heat a large skillet over medium-high heat. Add the chopped turkey bacon and cook until it starts to crisp and release fat, about 3-4 minutes. Push the bacon to one side of the pan.
Step 2: Add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook until no longer pink, about 5-6 minutes. Drain any excess grease if necessary.
Step 3: Stir in the diced chicken ham and sauté for another 2 minutes, mixing with the beef and bacon.
Step 4: In a separate medium bowl, whisk together the ketchup, tomato paste, Worcestershire sauce, Dijon mustard, brown sugar, and smoked paprika until well combined.
Step 5: Pour the whisked sauce mixture over the meat and vegetables in the skillet, stirring well to combine and coat everything evenly.
Step 6: Reduce the heat to medium-low and let the sloppy joe mixture simmer for 8-10 minutes, stirring occasionally, until the sauce has thickened.
Step 7: Meanwhile, preheat a clean skillet or griddle over medium heat. Lightly brush one side of each slice of Texas toast with vegetable oil or butter.
Step 8: Place the Texas toast buttered-side down on the preheated skillet/griddle. Toast for 2 minutes per side, or until golden brown and crisp. Repeat with the remaining slices.
Step 9: To assemble, pile a generous amount of the hot sloppy joe mixture onto each toasted Texas toast slice.
Step 10: Sprinkle generously with shredded cheddar or pepper jack cheese over the sloppy joe filling.
