Instructions

Step 1: Start by grating your zucchini. Place the grated zucchini in a clean kitchen towel or several layers of cheesecloth. This is a crucial step: squeeze out as much excess moisture as possible. The drier your zucchini, the crisper your breadsticks will be.
Step 2: In a large mixing bowl, combine the thoroughly drained grated zucchini, half of the mozzarella cheese, the Parmesan cheese, the egg, and the garlic parsley salt. Mix everything together well until all ingredients are evenly distributed.
Step 3: Line a baking sheet with parchment paper or a silicone mat. Spread the zucchini mixture evenly over the prepared sheet, pressing it down firmly into a uniform layer, about half an inch thick. This even thickness helps ensure uniform cooking and crispiness.
Step 4: Preheat your oven to 425°F (220°C). Bake the zucchini crust for 15 minutes, or until it's golden brown and appears crispy around the edges.
Step 5: Remove the baking sheet from the oven. Sprinkle the remaining mozzarella cheese evenly over the baked crust. Return it to the oven for an additional 2-5 minutes, or until the cheese is melted, bubbly, and slightly golden. Once done, remove, slice into breadstick shapes, and serve immediately!

Notes

Ensuring the zucchini is thoroughly drained of moisture is key to crispy breadsticks. For an extra kick, add a pinch of red pepper flakes to the mixture. These are delicious with marinara or ranch dip!
