Cherry Chocolate Chip Cookies

Description

These delightful cookies combine the sweet-tart chewiness of dried cherries with rich chocolate chips for a perfect, irresistible treat.


Ingredients

¼ cup unsalted butter, softened
½ cup granulated sugar
¼ cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
¾ cup semi-sweet chocolate chips
½ cup dried cherries, chopped (if large)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar with an electric mixer until light and fluffy.
Step 3: Beat in the egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
Step 6: Fold in the semi-sweet chocolate chips and chopped dried cherries until evenly distributed throughout the dough.
Step 7: Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
Step 8: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set but still look soft. Do not overbake.
Step 9: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, sprinkle a pinch of flaky sea salt on top of the cookies immediately after they come out of the oven. This enhances both the chocolate and cherry flavors!
