A delightful balance of tart cherry plums and sweet, moist muffin batter. Perfect for summer breakfasts or snacks.
Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, melted and cooled
2 large eggs, room temperature
1/2 cup sour cream
1 tsp vanilla extract
1.5 cups cherry plums, pitted and halved
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
Step 2: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 3: In a medium bowl, combine the melted butter, eggs, sour cream, and vanilla extract until smooth.
Step 4: Gently fold the wet ingredients into the dry ingredients using a spatula. Stop as soon as no streaks of flour remain.
Step 5: Fold in the halved cherry plums carefully to avoid crushing the fruit.
Step 6: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Step 7: Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Ensure plums are pitted. If they are very sour, you can sprinkle a little extra sugar on top before baking.
