- 1 tbsp cornstarch
- 1/4 cup water

- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, cold and cubed
- 1 tsp ground cardamom
- 1/2 tsp ground anise
- Powdered sugar for dusting (optional)
- Fresh cherries for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a food processor, combine flour, granulated sugar, cold cubed butter, and salt; pulse until mixture resembles coarse crumbs.
- Press crust mixture evenly into bottom of prepared baking dish.
- Bake for 15 minutes or until lightly golden; let cool slightly.
- In a medium saucepan, combine diced rhubarb, chopped cherries, granulated sugar, cornstarch, and water; mix well.
- Bring mixture to a boil over medium heat, stirring constantly.
- Reduce heat to low and simmer for 10 minutes until filling thickens; let cool slightly.
- Spread filling evenly over cooled crust.
- In a medium bowl, combine flour, rolled oats, brown sugar, cold cubed butter, ground cardamom, and ground anise; mix until coarse crumbs form.
- Sprinkle streusel topping evenly over filling.
- Bake for 30-35 minutes or until streusel topping is golden brown.
- Cool completely in baking dish.
- Optional: Dust with powdered sugar and garnish with fresh cherries.
