  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 2 cups fresh rhubarb, diced
  • 1 cup fresh cherries, pitted and chopped
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1 tsp ground cardamom
  • 1/2 tsp ground anise
  • Powdered sugar for dusting (optional)
  • Fresh cherries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a food processor, combine flour, granulated sugar, cold cubed butter, and salt; pulse until mixture resembles coarse crumbs.
  3. Press crust mixture evenly into bottom of prepared baking dish.
  4. Bake for 15 minutes or until lightly golden; let cool slightly.
  5. In a medium saucepan, combine diced rhubarb, chopped cherries, granulated sugar, cornstarch, and water; mix well.
  6. Bring mixture to a boil over medium heat, stirring constantly.
  7. Reduce heat to low and simmer for 10 minutes until filling thickens; let cool slightly.
  8. Spread filling evenly over cooled crust.
  9. In a medium bowl, combine flour, rolled oats, brown sugar, cold cubed butter, ground cardamom, and ground anise; mix until coarse crumbs form.
  10. Sprinkle streusel topping evenly over filling.
  11. Bake for 30-35 minutes or until streusel topping is golden brown.
  12. Cool completely in baking dish.
  13. Optional: Dust with powdered sugar and garnish with fresh cherries.
  14. Cut into squares and serve. Enjoy your delicious and aromatic coffee bars!

Notes
