Description

These ultimate chewy oatmeal cookies combine the rich sweetness of brown sugar with hearty oats and crunchy pecans for a truly irresistible treat.


Ingredients

1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old-fashioned rolled oats
1 cup chopped pecans, lightly toasted (optional)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.
Step 2: In a large bowl, using an electric mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
Step 3: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Step 4: In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
Step 6: Fold in the old-fashioned oats and chopped pecans until evenly distributed throughout the dough.
Step 7: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
Step 8: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still slightly soft. They will set as they cool.
Step 9: Remove from the oven and let cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!

Notes

For an extra depth of flavor, chilling the dough for at least 30 minutes before baking helps prevent spreading and allows the flavors to deepen. If you don't have old-fashioned oats, quick oats can be used but may result in a slightly different texture.
