Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 package (3 oz) flavored gelatin mix (Jello), plus extra for rolling
Instructions
Step 1: Preheat your oven to 350°F and line your baking sheets with parchment paper.
Step 2: Cream the softened butter and granulated sugar together in a large bowl until light and fluffy.
Step 3: Beat in the egg and vanilla extract until the mixture is smooth and well combined.
Step 4: Slowly add the flour, baking powder, and salt to the wet ingredients, mixing until a soft dough forms.
Step 5: Divide the dough and knead in the Jello powder until the color is consistent.
Step 6: Roll the dough into 1-inch balls and coat them in extra gelatin powder if desired.
Step 7: Bake for 8-10 minutes. The cookies should be set but not browned on top.
Step 8: Let cool on the sheet for 5 minutes before moving to a wire cooling rack.
