- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- Powdered sugar (optional)
- Chocolate drizzle (optional)
Instructions
- In a large saucepan, combine granulated sugar and light corn syrup. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil.
- Remove from heat and stir in peanut butter and vanilla extract until smooth.
- In a large bowl, combine Rice Chex cereal and peanut butter mixture. Stir until cereal is evenly coated.
- Press mixture into a greased baking dish.
- In a microwave-safe bowl, melt semi-sweet chocolate chips and butterscotch chips in 30-second intervals, stirring until smooth.
- Spread melted chocolate mixture over cereal mixture.
- Chill in refrigerator for at least 1 hour or until set.
- Garnish with powdered sugar and chocolate drizzle if desired. Cut into squares and serve.
