Ingredients

  • 6 cups Rice Chex cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • Powdered sugar (optional)
  • Chocolate drizzle (optional)

Instructions

  1. In a large saucepan, combine granulated sugar and light corn syrup. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil.
  2. Remove from heat and stir in peanut butter and vanilla extract until smooth.
  3. In a large bowl, combine Rice Chex cereal and peanut butter mixture. Stir until cereal is evenly coated.
  4. Press mixture into a greased baking dish.
  5. In a microwave-safe bowl, melt semi-sweet chocolate chips and butterscotch chips in 30-second intervals, stirring until smooth.
  6. Spread melted chocolate mixture over cereal mixture.
  7. Chill in refrigerator for at least 1 hour or until set.
  8. Garnish with powdered sugar and chocolate drizzle if desired. Cut into squares and serve.
