A classic Windy City bakery-style slab pie with a tender crust, spiced apple filling, and a sweet vanilla glaze.
Ingredients
4 cups all-purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
1½ cups cold unsalted butter, cubed
2 large eggs
½ cup ice water
1 tablespoon lemon juice
6 to 7 cups sliced apples, peeled and cored
¾ cup granulated sugar
¼ cup brown sugar
2 tablespoons cornstarch
1½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons lemon juice
1 teaspoon vanilla extract
2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla extract
2 tablespoons melted butter
Instructions
Step 1: Prepare the crust by mixing flour, sugar, and salt, then cutting in cold butter until crumbly.
Step 2: Mix liquid crust ingredients and combine with flour until dough forms; chill for 1 hour.
Step 3: Toss sliced apples with sugars, cornstarch, spices, lemon juice, and vanilla for the filling.
Step 4: Roll out bottom crust into a 10x15 inch pan and top with the apple mixture.
Step 5: Cover with the top crust, seal edges, and prick with a fork.
Step 6: Bake at 375°F for 45-50 minutes until golden brown.
Step 7: Whisk glaze ingredients and pour over the hot slices immediately after removing from the oven.
Notes
Ensure the butter is very cold for the flakiest crust. Granny Smith apples provide the best texture.
