Ingredients
4 boneless, skinless chicken breasts (about 1.5-2 lbs total)
8 slices cooked crispy bacon, crumbled
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp cream cheese, softened
1 tsp garlic powder
1/2 tsp dried Italian seasoning
Salt and black pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/4 cup olive oil (for baking or air frying, optional)

Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack for optimal crispiness.
Step 2: Pound each chicken breast to an even thickness of about 1/4 to 1/2 inch. If the breasts are very large, you can cut them in half lengthwise to make 8 smaller pieces.
Step 3: In a small bowl, combine the crumbled bacon, shredded mozzarella, grated Parmesan, softened cream cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix well until everything is evenly distributed.
Step 4: Place a spoonful (about 1.5-2 tablespoons) of the bacon-cheese mixture in the center of each flattened chicken piece.
Step 5: Carefully roll up each chicken piece, tucking in the sides as you go, to form a tight 'bomb' shape. If needed, secure the rolls with a toothpick to hold them together.
Step 6: Set up your breading station: Place the all-purpose flour in one shallow dish, the beaten eggs in a second, and the panko breadcrumbs in a third.
Step 7: Dredge each chicken bomb first in the flour, shaking off any excess. Then, dip it into the beaten egg, ensuring it's fully coated. Finally, roll it in the panko breadcrumbs, pressing firmly to make sure the breading adheres well to all sides.
Step 8: Place the breaded chicken bombs on your prepared baking sheet. For extra crispiness and golden color, you can lightly drizzle or spray them with olive oil.
Step 9: Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the exterior is golden brown and crispy. If you used toothpicks, remove them before serving.

Notes
For an even crispier crust, consider air frying these! Preheat your air fryer to 375°F (190°C), lightly spray the bombs with oil, and cook for 12-18 minutes, flipping halfway. Always ensure chicken is cooked to an internal temperature of 165°F (74°C).
