Ingredients
4 boneless skinless chicken breasts
2 tablespoons extra virgin olive oil
1 tablespoon unsalted butter
2 lemons (one for zest and juice, one sliced)
4 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
Instructions
Step 1: Place the chicken breasts between two pieces of plastic wrap and pound to a uniform 1/2-inch thickness using a meat mallet.
Step 2: In a small bowl, whisk together the olive oil, lemon zest, minced garlic, rosemary, salt, and pepper.
Step 3: Rub the herb mixture over both sides of the chicken and let marinate at room temperature for 10-15 minutes.
Step 4: Heat a large skillet over medium-high heat. Add a splash of oil and sear the chicken for 5-6 minutes on one side until golden brown.
Step 5: Flip the chicken, add the butter and lemon slices to the pan, and cook for another 4-5 minutes while basting with the pan juices.
Step 6: Ensure the internal temperature reaches 165°F (74°C), then remove from heat and let rest for 5 minutes before serving.
Notes
