Chicken Breasts with Bacon Mustard Sauce

Description

Succulent chicken breasts are pan-seared and then drenched in a rich, creamy sauce featuring crispy bacon, sautéed aromatics, and tangy Dijon mustard, perfect for an impressive yet easy meal.


Ingredients

2 boneless, skinless chicken breasts (about 1 pound total)
4 slices of bacon
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
2 tablespoons Dijon mustard
1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)
Salt and freshly ground black pepper to taste
Fresh parsley, chopped, for garnish (optional)


Instructions

Step 1: Pat chicken breasts dry with paper towels and season generously with salt and pepper on both sides. If desired, pound them to an even 1/2-inch thickness.
Step 2: In a large skillet or pan over medium-high heat, cook the bacon until crispy. Remove bacon from the pan, set aside on a paper towel-lined plate, and chop into pieces once cool. Reserve about 1 tablespoon of bacon fat in the skillet, draining any excess.
Step 3: Add olive oil to the same skillet with the reserved bacon fat over medium-high heat. Sear the chicken breasts for 3-5 minutes per side, or until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken from the skillet and set aside on a plate, tented with foil.
Step 4: Reduce heat to medium. Add the chopped onion to the skillet and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and fresh thyme, cooking for another minute until fragrant.
Step 5: Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let it reduce slightly, about 2-3 minutes.
Step 6: Whisk in the heavy cream and Dijon mustard. Continue to simmer gently for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
Step 7: Return the cooked chicken breasts to the skillet, spooning the sauce over them. Stir in the chopped crispy bacon. Cook for another minute to heat through.
Step 8: Garnish with fresh chopped parsley, if using, and serve immediately.

Notes

Serve with mashed potatoes, rice, or steamed green beans to complete your meal. For a spicier kick, add a pinch of red pepper flakes with the garlic.
