Ingredients
4 cups cooked chicken, shredded or cubed
1 lb fresh broccoli florets, steamed
1 can (10.5 oz) condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon curry powder
1.5 cups sharp cheddar cheese, shredded
1/2 cup panko breadcrumbs
2 tablespoons butter, melted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Step 2: Arrange the steamed broccoli florets in a single layer at the bottom of the prepared dish, followed by the cooked chicken.
Step 3: In a medium bowl, combine the cream of chicken soup, mayonnaise, sour cream, lemon juice, and curry powder. Stir until well blended.
Step 4: Spread the sauce mixture evenly over the chicken and broccoli layer.
Step 5: Sprinkle the shredded cheddar cheese over the sauce. In a small bowl, mix the panko breadcrumbs with melted butter and sprinkle over the cheese.
Step 6: Bake for 25-30 minutes, or until the sauce is bubbling and the topping is golden brown.
Notes
You can substitute frozen broccoli for fresh, but ensure it is completely thawed and drained of excess moisture to avoid a watery casserole.
