- 3 cups cooked chicken, shredded or diced
- 2 cups egg noodles, uncooked
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil and cook egg noodles according to package directions until al dente. Drain and set aside.
- In a large bowl, combine cooked chicken, noodles, cream of chicken soup, sour cream, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer mixture to a greased 9x13-inch baking dish and spread evenly.
- Top with shredded cheddar cheese and breadcrumbs if using.
- Cover with foil and bake for 25 minutes. Uncover and bake an additional 10–15 minutes until bubbly and golden.
- Let cool slightly before serving.
Notes
Customize with added veggies like broccoli or bell peppers. For a healthier version, substitute sour cream with Greek yogurt. Freeze before baking for a convenient make-ahead meal.
