Description
A classic Italian-American chicken parmesan recipe featuring crispy breaded chicken, savory marinara, and melted mozzarella.
Ingredients
2 large skinless, boneless chicken breasts, halved horizontally
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup Panko breadcrumbs
1/2 cup Italian breadcrumbs
1/2 cup grated Parmigiano-Reggiano
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 cup vegetable oil for frying
2 cups marinara sauce
1.5 cups shredded low-moisture mozzarella cheese
Fresh basil leaves for garnish
Instructions
Step 1: Place chicken cutlets between two sheets of plastic wrap and pound to an even 1/2-inch thickness.
Step 2: Set up three bowls: one with flour, salt, and pepper; one with beaten eggs; and one with a mix of Panko, Italian breadcrumbs, parmesan, garlic powder, and oregano.
Step 3: Dredge each chicken piece in flour, dip in egg, and then press firmly into the breadcrumb mixture until fully coated.
Step 4: Heat oil in a large skillet over medium-high heat. Fry chicken for 3-4 minutes per side until golden brown and crispy.
Step 5: Spread 1/2 cup of marinara in a baking dish. Place fried chicken on top. Spoon remaining sauce over the center of the chicken and top with mozzarella.
Step 6: Bake at 400°F (200°C) for 10-15 minutes until the cheese is melted and bubbling. Garnish with fresh basil.
Notes
Always use low-moisture mozzarella for the best melt and avoid overcrowding the pan when frying.
