Description
A high-protein, zesty Mexican-inspired casserole using cottage cheese for a creamy, low-carb finish.
Ingredients
3 cups cooked shredded chicken breast
16 oz low-fat or full-fat cottage cheese
2 large eggs
1 packet (1 oz) taco seasoning
1 cup salsa (drained)
1/2 cup canned black beans (rinsed)
1/2 cup frozen corn
1.5 cups shredded cheddar cheese
1/4 cup chopped green onions
Instructions
Step 1: Preheat oven to 375°F (190°C) and spray a 9x13 baking dish with non-stick spray.
Step 2: In a large bowl, whisk the eggs then fold in the cottage cheese and taco seasoning.
Step 3: Add the shredded chicken, black beans, corn, and 1 cup of the cheddar cheese to the bowl and mix well.
Step 4: Spread the mixture into the prepared baking dish and top with the remaining 1/2 cup of cheese.
Step 5: Bake for 25-30 minutes until the cheese is melted and the center is set.
Step 6: Let rest for 5 minutes, then garnish with green onions and serve.
Notes
Blending the cottage cheese makes the texture very similar to a heavy cream sauce if you have picky eaters.
