Description

A vibrant, nutrient-packed Mediterranean salad featuring creamy avocado, salty feta, and protein-rich chickpeas tossed in a zesty lemon-herb dressing.


Ingredients

1 can (15 oz) chickpeas, drained and rinsed
1 large ripe avocado, diced
1/2 cup feta cheese, crumbled
1 cup English cucumber, diced
1/4 cup red onion, finely minced
1/4 cup fresh parsley, chopped
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
Salt and black pepper to taste


Instructions
