Description

Juicy sirloin steak and colorful vegetables marinated in a sweet and smoky chipotle honey sauce, then perfectly grilled.


Ingredients

1.5 lbs sirloin steak, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1/4 cup chipotle peppers in adobo sauce (about 2-3 peppers, chopped, with some sauce)
1/4 cup honey
2 tablespoons fresh lime juice
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Wooden or metal skewers


Instructions

Step 1: In a medium bowl, whisk together the chopped chipotle peppers in adobo, honey, lime juice, minced garlic, olive oil, cumin, smoked paprika, salt, and black pepper to create the marinade.
Step 2: Add the cubed sirloin steak to the marinade, tossing to ensure all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 8 hours for best flavor.
Step 3: If using wooden skewers, soak them in water for at least 30 minutes. Preheat your grill to medium-high heat (about 400°F / 200°C).
Step 4: Thread the marinated steak and vegetable pieces alternately onto the skewers. Don't pack them too tightly; leave a small space between each piece for even cooking.
Step 5: Place the skewers on the preheated grill. Grill for 3-5 minutes per side, turning occasionally, until the steak reaches your desired doneness (130-135°F for medium-rare).
Step 6: Remove the skewers from the grill and let them rest for 5 minutes before serving. Garnish with fresh cilantro if desired.

Notes

For extra spice, add a pinch of cayenne pepper to the marinade. Serve with cilantro lime rice or a fresh salad for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
