Ingredients
2 cups cottage cheese
2 large eggs
1/2 cup maple syrup or honey
1 tsp vanilla extract
2 cups oat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup dark chocolate chips
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin or line with paper liners.
Step 2: Place the cottage cheese, eggs, maple syrup, and vanilla extract in a blender. Blend on high until the mixture is completely smooth and no curds remain.
Step 3: In a large bowl, whisk together the oat flour, baking powder, and baking soda.
Step 4: Pour the blended cottage cheese mixture into the dry ingredients. Stir with a spatula until the batter is just combined.
Step 5: Fold in the chocolate chips carefully to avoid overworking the batter.
Step 6: Distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.
Step 7: Bake for 22 to 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Step 8: Let the muffins cool in the tin for at least 10 minutes before removing them to a wire rack to cool completely.
Notes
For a smooth texture, ensure the cottage cheese is blended thoroughly. If the batter is too thick, add a splash of almond milk.
