A wonderfully moist and flavorful pumpkin bread studded with sweet chocolate chips, perfect for a cozy fall treat.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ cup vegetable oil
2 large eggs
1 ½ cups granulated sugar
1 teaspoon vanilla extract
1 cup pumpkin puree
1 ¼ cups semi-sweet chocolate chips (divided)

Instructions
Step 1: Preheat the oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan with oil spray and set it aside.
Step 2: In a medium bowl, mix together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground cloves, and ground nutmeg. Set the dry ingredients aside.
Step 3: In a large bowl, whisk together the vegetable oil, eggs, granulated sugar, vanilla extract, and pumpkin puree until fully combined.
Step 4: Gradually add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix.
Step 5: Fold in 1 cup of the chocolate chips until evenly distributed throughout the batter.
Step 6: Pour the batter into the prepared loaf pan and spread it evenly. Top with the remaining ¼ cup of chocolate chips.
Step 7: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If it’s still wet, bake for an additional 5-10 minutes.
Step 8: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
For an extra autumn touch, consider adding a pinch of ground ginger or allspice to your spice mix. This bread is excellent served warm with a pat of butter.
