Description

Adorable individual cheesecakes featuring a rich chocolate base and whimsical gnome-inspired decorations, perfect for festive gatherings and bringing smiles.


Ingredients

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
1/2 cup semi-sweet chocolate chips, melted
For Decoration:
1 cup heavy whipping cream
2 tablespoons powdered sugar
12 strawberries, pointed end up (for hats)
1/2 cup chocolate candy melts, melted
Mini chocolate chips or small candies (for noses)


Instructions

Step 1: Preheat your oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners or use mini springform pans. If using paper liners, you may need to spray them lightly.
Step 2: In a medium bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined. Press about 1-2 tablespoons of the mixture into the bottom of each muffin cup or springform pan.
Step 3: In a large bowl, beat the softened cream cheese with 1 cup granulated sugar and cocoa powder until smooth and creamy. Scrape down the sides of the bowl as needed.
Step 4: Beat in the eggs one at a time, just until combined. Stir in the vanilla extract, sour cream, and melted semi-sweet chocolate chips until the batter is smooth.
Step 5: Divide the cheesecake batter evenly among the prepared muffin cups or springform pans, filling each about two-thirds full.
Step 6: Bake for 25-30 minutes, or until the edges are set and the centers have a slight jiggle. If using a water bath, carefully place the muffin tin in a larger pan and fill the larger pan with about an inch of hot water.
Step 7: Turn off the oven, crack the door open, and let the cheesecakes cool in the oven for 15 minutes. Remove from the oven and let cool completely on a wire rack. Once cool, refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled.
Step 8: For the decorations, wash and pat dry the strawberries. Melt the chocolate candy melts according to package directions. Dip the pointed end of each strawberry into the melted chocolate to create the 'hat' and place on parchment paper to set.
Step 9: In a cold bowl, beat the heavy whipping cream with powdered sugar until stiff peaks form. Transfer to a piping bag with a star tip.
Step 10: Once cheesecakes are chilled, pipe a 'beard' of whipped cream onto each cheesecake. Place a chocolate-dipped strawberry 'hat' on top of the whipped cream, then add a mini chocolate chip or small candy as the 'nose' in the center of the beard. Serve immediately or keep refrigerated until ready to serve.

Notes

For extra crunch, add a teaspoon of mini chocolate chips to the graham cracker crust. Feel free to experiment with different candies for the gnome hats and noses to customize your whimsical creations!
