Instructions
- Preheat oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper and butter the top.
- In a medium bowl, whisk together sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In a large bowl, whisk flour, cocoa powder, baking powder, and sea salt.
- Pour wet ingredients into dry ingredients and stir until just combined; batter will be thick.
- Gently fold in rhubarb, chocolate chips, and walnuts.
- Spread batter evenly in prepared pan.
- Bake 20-25 minutes, until a toothpick inserted in center comes out with moist crumbs.
- Cool at least 10 minutes before cutting into squares.
Notes
Avoid overbaking to keep brownies fudgy. For thicker brownies, increase recipe by half and bake 5 minutes longer. Store in airtight container up to 4 days or freeze for longer storage.
