Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp baking powder
1/2 cup whole milk
1/4 cup vegetable oil
1 large egg
1/2 cup strong brewed espresso
2 tbsp granulated sugar (for soak)
8 oz cold mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
Instructions
Step 1: Preheat oven to 350°F and line a muffin tin with liners.
Step 2: Whisk flour, cocoa, 1 cup sugar, and baking powder in a bowl.
Step 3: Stir in milk, oil, and egg until the batter is smooth.
Step 4: Bake for 18-20 minutes, then cool slightly.
Step 5: Mix espresso with 2 tbsp sugar and brush over warm cupcakes after poking holes with a fork.
Step 6: Whip cold mascarpone, heavy cream, powdered sugar, and vanilla until stiff peaks form.
Step 7: Pipe frosting onto cupcakes and dust with cocoa powder.
Notes
Ensure the heavy cream and mascarpone are very cold before whipping for best results.
