Ingredients
2 cups cooked chicken breast, shredded
3 cups napa cabbage, thinly sliced
2 cups red cabbage, thinly sliced
1 cup carrots, julienned
1 red bell pepper, thinly sliced
1/2 cup fresh cilantro, chopped
1/4 cup green onions, sliced
1/2 cup roasted peanuts, crushed
1/2 cup creamy peanut butter
3 tablespoons lime juice
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon fresh ginger, grated
1 clove garlic, minced
Instructions
Step 1: In a small jar or bowl, whisk together the peanut butter, lime juice, soy sauce, honey, ginger, and garlic to create the dressing.
Step 2: Thin the dressing with 1-2 tablespoons of warm water until it reaches a pourable consistency.
Step 3: In a large salad bowl, toss together both types of cabbage, carrots, red bell pepper, and the shredded chicken.
Step 4: Pour the peanut dressing over the salad and toss until all ingredients are evenly coated.
Step 5: Garnish with fresh cilantro, green onions, and the crushed roasted peanuts before serving.
Notes
Use rotisserie chicken to save time. For a spicy kick, add a teaspoon of sriracha or red pepper flakes to the dressing.
