Description

A festive, incredibly easy, and creamy no-bake dessert or side dish, perfect for any holiday gathering with its vibrant red and white hues.

Ingredients

Scale

1 (21 ounce) can cherry pie filling
1 (20 ounce) can crushed pineapple, well drained
1 (8 ounce) container frozen whipped topping, thawed
3 cups mini marshmallows
1/2 cup chopped pecans (or walnuts)
1/2 teaspoon almond extract (optional)

Instructions

Step 1: In a large mixing bowl, combine the cherry pie filling and the well-drained crushed pineapple. Stir gently to combine.
Step 2: Add the thawed whipped topping and mini marshmallows to the fruit mixture. Carefully fold until all ingredients are just combined. Be gentle to maintain the fluffy texture of the whipped topping.
Step 3: Stir in the chopped pecans and almond extract (if using) until evenly distributed.
Step 4: Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the marshmallows to soften. This chilling time is essential for the best texture and taste.
Step 5: Serve chilled as a festive side dish or a light dessert. Garnish with extra pecans or a fresh cherry if desired.

Notes

For best results, ensure your pineapple is very well-drained to prevent the fluff from becoming watery. Gently folding the ingredients preserves the airy texture. This salad is fantastic made a day ahead!
