Description

A festive and creamy twist on the classic mojito, featuring coconut milk, fresh mint, and a hint of lime, perfect for holiday gatherings.


Ingredients

3/4 cup fresh lime juice
1/4 cup packed fresh mint leaves
1/2 cup granulated sugar
1/2 cup white rum
1/2 cup coconut rum
1 cup canned full-fat coconut milk
Sparkling water (or club soda), to top
Pomegranate arils, for garnish
Extra mint sprigs, for garnish


Instructions

Step 1: In a sturdy cocktail shaker or a large glass, combine the fresh lime juice, packed mint leaves, and granulated sugar. Gently muddle them together for about 30-60 seconds, just enough to release the mint oils and dissolve the sugar. Be careful not to over-muddle, which can make the mint bitter.
Step 2: Add the white rum, coconut rum, and canned full-fat coconut milk to the shaker. Fill the shaker with ice cubes.
Step 3: Secure the lid and shake vigorously for 15-20 seconds until the mixture is well combined and thoroughly chilled.
Step 4: Divide the mixture among four serving glasses filled with fresh ice. Top each glass with sparkling water or club soda to your desired fizziness. Garnish generously with fresh pomegranate arils and a sprig of mint. Serve immediately and enjoy your festive Christmas Coconut Mojito!

Notes
