A festive, no-bake layered dessert featuring sugar cookies, creamy cheesecake filling, and vanilla pudding.
Ingredients
2 packs (12 oz each) crunchy sugar cookies or shortbread
16 oz cream cheese, softened
1 cup granulated sugar
2 cups heavy whipping cream, whipped to stiff peaks
1 box (5.1 oz) instant vanilla pudding mix
3 cups whole milk, cold
1/2 cup festive red and green sprinkles
Instructions
Step 1: Layer the bottom of a 9x13 inch glass baking dish with a single layer of the sugar cookies.
Step 2: In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Step 3: Gently fold in half of the prepared whipped cream into the cream cheese mixture and spread evenly over the cookies.
Step 4: In a separate bowl, whisk together the instant pudding mix and cold milk for 2 minutes until it starts to set.
Step 5: Pour the pudding over the cream cheese layer and smooth it out with a spatula.
Step 6: Place another layer of cookies on top of the pudding, then top with the remaining whipped cream.
Step 7: Decorate with festive sprinkles and refrigerate for at least 4 hours (ideally overnight) before slicing.
Notes
For best results, let the lasagna sit in the fridge overnight so the cookies can soften into a cake-like consistency.
