Ingredients
2 cups all-purpose flour
1/2 cup light brown sugar, packed
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 3/4 cups whole milk
2 large eggs
1/2 cup unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
Instructions
Step 1: Preheat your waffle iron to medium-high heat according to the manufacturer's instructions.
Step 2: In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt until well combined.
Step 3: In a separate medium bowl, beat the eggs and then whisk in the milk, melted butter, and vanilla extract.
Step 4: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined; do not over-mix.
Step 5: Lightly coat the waffle iron with oil or butter. Pour about 1/2 cup of batter onto the iron and cook until golden brown (usually 3-4 minutes).

Notes
For extra crispy waffles, add 2 tablespoons of cornstarch to the dry ingredients and replace a portion of the milk with seltzer water.
