Homemade Cinnamon Sugar Pretzels

Description

A delicious and easy cinnamon sugar pretzels recipe that produces soft, buttery, mall-style pretzels right in your own kitchen.


Ingredients

Scale

1.5 cups warm water (110°F)
1 tablespoon granulated sugar
2.25 teaspoons active dry yeast (1 packet)
4.5 cups all-purpose or bread flour
1 teaspoon salt
2 tablespoons unsalted butter, melted (for dough)
2/3 cup baking soda (for water bath)
10 cups water (for water bath)
1/2 cup unsalted butter, melted (for topping)
1/2 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)


Instructions

Step 1: In a small bowl, dissolve 1 tablespoon of sugar and the yeast in 1.5 cups of warm water. Let it sit for 5-10 minutes until it becomes foamy.
Step 2: In a large mixing bowl or stand mixer, combine the flour, salt, and 2 tablespoons of melted butter. Add the yeast mixture and knead for 5 minutes until the dough is smooth and elastic.
Step 3: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.
Step 4: Pre-heat your oven to 450°F (230°C) and line two baking sheets with parchment paper.
Step 5: Bring 10 cups of water and 2/3 cup of baking soda to a rolling boil in a large pot. While the water is heating, divide the dough into 8 equal pieces.
Step 6: Roll each piece into a long rope (about 20-22 inches) and twist into a pretzel shape. Dip each pretzel into the boiling baking soda water for 30 seconds, then remove with a slotted spoon.
Step 7: Place the pretzels on the baking sheet and bake for 10-12 minutes until golden brown.
Step 8: While baking, mix the remaining sugar and cinnamon in a shallow bowl. Once the pretzels are done, dip them into the 1/2 cup of melted butter and then generously coat with the cinnamon sugar mixture.

Notes

Ensure your water bath is boiling vigorously before dipping the pretzels for the best crust.
