- 2 cups shredded zucchini (squeezed of excess moisture)
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- For the swirl: 1/3 cup granulated sugar mixed with 1 tablespoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and secure with binder clips.
- In a large bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract; mix until blended.
- In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add dry ingredients to wet, stirring just until combined; avoid overmixing.
- Pour half the batter into the prepared pan. Sprinkle half the cinnamon sugar mixture evenly over the batter.
- Spread remaining batter over the cinnamon sugar layer, then sprinkle remaining cinnamon sugar on top.
- Use a knife to gently swirl the cinnamon sugar through the batter to create a marbled effect.
- Bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10–15 minutes before removing. Slice and serve warm or at room temperature.
Notes
Avoid overmixing the batter to keep the bread tender. Use parchment paper for easy removal. If zucchini is watery, squeeze out excess moisture to prevent sogginess. Add chopped nuts for extra texture if desired.
